
This grape
variety is known in mainland Greece under various names, including Rapsani,
and it is traditionally blended with Stavroto and Krassato to
obtain a dense, full-bodied red wine. In other parts of the world, to convert
its natural roughness, the variety is mixed with several international
varieties such as Syrah and Merlot.
Xinomavro needs special care in
cultivation, low yields per hectare, and favorable weather conditions to reveal
itself in all its splendor. Xinomavro wines are
usually ready for the market after at least two years of maturation and aging
in oak barrels and glass. This grape's essence reveals distinct complex aromas
of red fruits, flowers, tomatoes, olives, prunes, tobacco, and nuts.
This
fascinating variety offers a strong wine, not very strong, and which reveals
its complexity when accompanied by dishes with intense and rich aromas. We
