Perfect Pairing: Excellent match for fish with light sauces, shellfish, and botargo. White meat like poultry, pork with complex sauces thanks to its full body; vegetables and white cheese too.
Vinification Techniques: Alcoholic fermentation in graduated temperatures from 12 to 16°C in stainless steel tanks. Absence of malolactic conversion. Maturation in Accacia barrels for 8 to 9 months and then bottle aging.
